Starbucks and Menchie's -- along with GNC and Cole Optical -- would be part of a new 12,000- square-foot retail space that Echo will build at the plaza, according to construction elevation drawings submitted to Solon's planning department.

The building will be built behind the Fifth Third Bank and D.O. Sommers. That will be the first building constructed once Echo breaks ground. The plan is to have the building complete later this year.

Solon Planning Director Rob Frankland said that there are plans for a drive-thru for Starbucks. Those plans will go before Solon's Safety and Public Properties Committee in the near future.

Once that building is done, Echo will tear down the south end of the existing plaza, where the new Giant Eagle will be built. The existing Giant Eagle will remain open until the new one is finished, expected sometime in 2013.
